My Kitchen addiction has declared January 2011 the Soup month for her Kitchen Bootcamp. I love soups since the one tasted at my german friend Claudia. I’m on my way back for my almost annual visit to her in Munich. She taught me soups’ magic and to her I dedicate this Broccoli and Pumpkin Soup.
As always happens to me, the idea for that Soup born as a variation of Claudia’s Pumpkin Soup, whose recipes has roots in her romenian roots. My Broccoli and Pumpkin Soup tries to merge her recipe with my Roman life.
The result is good as a good friendship. Its taste improves with time, the day is definitely better.
Broccoli and Pumpkin Soup
Ingredients for 4-6 people
1400 grams of water
half red onion
3 potatoes (around 400 grams)
400 grams of pumpkin
200 grams of broccoli
salt and pepper
to taste: curcuma and a little bit of butter (or if you prefer cream or yoghurt)
Meanwhile cut onion, carrot and potatoes in piecies. Add them gradually to cold water.
Cut even pumpkin and broccoli in pieces and add to almost boiling water.
Peel the apple and cut it in pieces, as well. And…guess? Add it.
To the boiling broth add salt and pepper, not too much.
Boil for almost 30 minutes. After that time, remove from the heat and blend to obtain a smooth soup.
Season to taste with curcuma, butter and additional salt and pepper, according to your taste.
