Livestrong with a Taste of Yellow 2008

After thinking and re-thinking about my entry for Livestrong with a Taste of Yellow 2008 , while I was having my Sunday’s lunch I realized: “My entry is in front of me”. Without realizing it, the lunch that I made just for myself and that I really appreciate was the perfect contribution to Barbara’s Event.

Usually on Sunday I have lunch alone, while my guinea-pig (Paolo) shares some moments with his family. Last Sunday I wanted to cook something special, different by usual pasta. So I put together the food that fridge offered to me.

What to do with canned tomatoes, asparagus and polenta (obviously that one wasn’t in the fridge)?

POLENTA WITH TOMATOES AND ASPARAGUS
Ingredients for one person

Polenta (as much as you like)
3 fresh asparagus
Garlic
Curcuma
Olive oil
200 ml canned tomatoes
1-2 walnuts
Rosemary

Boil some water with salt to make Polenta (the yellow one). Add Polenta and blend for some minutes. Cook for 20-30 mins according to you polenta instructions.Meanwhile, put in pan 2 tablespoons of olive oil, add a little bit of garlic, some curcuma and few rosemary. Add tomatoes and cook for 5-10 minutes.Finally, clean and cut the ending hard part of asparagus.
Cook them to vapour for about 10 min with few water.In you dish, put the tomatoes mix, then polenta. On the top add asparagus and walnuts (in small pieces).
