Twelve Loaves: Framboise muffins with strawberry jam

Framboise in English muffins?
Twelve Loaves means for me just one thing: bread experiments!

Twelve Loaves is the monthly online event able to motive to think different, breadly different. March theme is Strawberries. Quite challenging finding them in Rome. So I opted for jam. Jam where in a bread?
Thanks to God, we have United Kingdom. What best of muffins (or scones) with strawberry jam?
And how to make even  more special muffins with yeast than adding a little bit of Framboise, that Belgian beer made with raspberries?

For English muffin recipe I asked to Elizabeth David. In  her complete and marvellous work “English Bread and Yeast Cookery” she reported her most successful recipe. An English Muffins recipe dated back to 1973 and whose roots she found in Manna book written by Walter Banfield in 1937.

As any modern blogger rich of caprices , I changed a little bit that excellent recipe. Just a little bit, I promise.
Indeed, I felt the need to use my levain (or wild yeast) and to add a mix of Framboise, kefir and water instead of the mix of water and milk suggested by Elizabeth, that dear friend of mine 🙂
I added even a rich teaspoon of strawberry jam inside of each muffin. Anyway, I gave credit to the Elizabeth suggestion to warm water and to use some oil to give muffins dough their character. Muffins didn’t lost that character with Framboise.

Compared to US muffin, English ones requires a little bit more time and in my case even more. Sourdough asks you hours and give you back surprising results. These Framboise muffins with strawberry jam are perfect with a glass of Framboise or an hot tea. Not so sweet, even if you feel soon the need to eat one more.

Framboise muffins with strawberry jam

framboise muffin

225 grams of farro flour
100 grams Framboise
100 grams kefir (or yogurt)
30 grams water
1/2 tablespoon of extra vergin olive oil
1/4 teaspoon cane sugar
75 grams sourdough (levain,wild yeast)
1/2 teaspoon salt
strawberry jam

Put the flour into a ovenproof bowel.
Put the bowl into a oven at 140°C for 8 minutes.

Meanwhile, mix kefir, water and Framboise.
Warm them to blood heat.
Add that warm liquid to your sourdough.
Work all together to make liquid your levain.

Add sugar to the how flour. Mix together.
Add the flour to liquid ingredients and remember to add as well extra vergin olive oil.
Work all ingredients, after a little bit add salt as well.

The dough will quickly become coherent, elastic and smooth.
Put into a bowl, cover it and let rise for 14 hours at 15-20°C.

Break down the dough into 8 portions.
Make a ball of each part and add 1 reach teaspoon of strawberry jam inside each ball.
Leave each ball inside a muffin butter mold.
I left rise for other 2-3 hours.

Then, cook your muffins at 180°C for about 25 minutes.
Serve cool with, if desired, strawberry jam.
